GNOCCHI DI ZUCCA E RICOTTA con SPECK E GORGONZOLA

A classic… Gnocchi Thursday! I love them, I usually make them with potatoes but this time I changed! Have you ever eaten them with pumpkin? They are delicious and if you add Ricotta to the pumpkin they will be even better and softer! I seasoned them with Speck and Gorgonzola, in my opinion a perfect combination! We are in pumpkin season and what better way to consume it and above all to let children eat it?
