Though a bit late, I made Dubai-style chocolate madeleines. By keeping them less sweet, the nutty flavor of pistachios really stands out, making them a delicious dessert. Give it a try and enjoy! I like desserts that aren’t too sweet, so I used the minimum amount of sugar. If you reduce it further, the texture might change, so keep that in mind~! Dubai Madeleine(about 10) Unsalted butter 95g Eggs 2개 Unrefined sugar 55g ( Can be substituted with regular sugar) Cake flour 64g Almond powder 28g Cocoa powder 10g Baking powder 3g Oligosaccharide syrup 20g (꿀 혹은 물엿으로 대체 가능 Can be substituted with honey) Heavy cream 15g Vanilla extract 1t (생략가능 Optional) Salt 한 꼬집 Raw kataifi 90g Melted butter 40g Toasted kataifi 85g (This is the yield after toasting the raw kataifi above) Pistachio paste 125g White chocolate 25g Dark chocolate 80g Pistachio Starch or cake flour 1/2t butter 5g Feel free to leave any questions in the comments!
