Perhaps little known, the city of Huichapan, land of pulque and xoconostle, is one of the most beautiful in the state of Hidalgo, thanks to its climate, vegetation, and colonial-era buildings that captivate the eye. Its country cuisine is a fusion of herbs and cactus combined with meats. Bruno starts the day with carnitas, and then visits the Museum of Archaeology and History. Hunger returns, and Bruno visits a vegetarian restaurant whose dishes are made with traditional ingredients.
