We sit down with Chef Raghavan, one of Madurai's most celebrated caterers and the man behind the legendary Annam and he doesn't just talk food. He takes us through it. From the spice markets that supply every hotel and canteen in the city, to a Jigarthanda shop that's been doing things the old way real Nannari roots, reduced milk, no shortcuts. Then comes something rare. A Jallikattu bull, up close. Black, majestic, and carrying the weight of a tradition that Tamil Nadu has protected for generations. Back in the kitchen, Chef Raghavan finally opens up his masala, his method, his pepper chukka that's been feeding Madurai for decades. A coarsely ground spice mix, gingerly oil, no chilli powder.
