episode 1 of my midsummer dessert series, the prettiest soft white chocolate raspberry cookies made with fresh juicy raspberries that melt into the dough, creating a natural berry marbled texture with crispy edges, soft centers & homemade raspberry jam on top. avsnitt 1 i min midsommardessertserie, mjuka hallonkakor med vit choklad, gjorda med färska saftiga hallon som smälter ner i degen & skapar en naturligt marmorerad bärtextur med krispiga kanter, mjuk kärna & hemmagjord hallonsylt på toppen. ingredients: 225g flour 145g unsalted butter, room temp 100g brown sugar 50g white sugar 1 large egg 1 tsp vanilla 1 tsp baking powder 1/2 tsp baking soda 3/4 tsp salt 60g white chocolate, chopped 80g fresh soft raspberries, diced raspberry jam: 70–80g raspberries 1 tbsp sugar 1/2 tsp cornstarch method: 1. in a large bowl cream butter & both sugars until smooth. 2. add egg & vanilla & mix until creamy. 3. add flour, baking powder, baking soda & salt. mix until just combined. 4. fold in raspberries & white chocolate gently. 5. cover bowl & refrigerate for 30 mins. 6. divide into 6 equal scoops & place on tray with cookie rings. leave enough distance between cookies. 7. bake at 180°c for 12–15 mins. 8. let cool for 10 mins. 9. use a bowl or glass to press a dent into around 3/4 of the cookie surface to create space for jam. raspberry jam method: 1. add raspberries & sugar into small pan on low heat. 2. cook until berries break down. 3. mix cornstarch with tiny splash water. 4. add into jam & stir until thick. 5. cool slightly. 6. spoon into cookie dents & garnish with soft raspberries. #midsummer #midsummerseries #raspberrycookies #whitechocolatecookies #berrycookies #summerdesserts #cookieasmr #bakingshorts #dessertshorts
