Fluffy, lightly sweet, and perfect for breakfast or dessert. 🥣 Ingredients: For the batter: • 2 eggs • 400 ml milk • 4 tbsp flour (heaped) • 1.5 tbsp sugar • a pinch of salt • 3 tbsp oil For the filling: • 350 g cottage cheese • 1 egg • 2 tbsp sugar • vanilla (to taste) Extra: • ~30 g butter 👨‍🍳 Cooking Process: 1️⃣ Prepare the batter: Whisk the eggs with sugar and a pinch of salt. Add milk and mix well. Gradually add the flour, stirring to avoid lumps. Pour in the oil and mix until smooth. 2️⃣ Cook the pancakes: Heat a pan and cook thin pancakes on both sides until lightly golden. 3️⃣ Make the filling: Mix cottage cheese, egg, sugar, and vanilla until smooth. 4️⃣ Form mini pancakes: Cut each pancake into 4 equal parts. Place about 1 teaspoon of filling on each piece and fold into small envelopes. 5️⃣ Prepare for baking: Grease a baking dish with butter. Place the pancakes tightly next to each other. 6️⃣ Brush with butter: Brush the pancakes on top with melted butter. 7️⃣ Bake: Cover with foil and bake at 160°C (320°F) for 30 minutes.
