A rich homemade appetizer with a restaurant-style taste and texture. 🥣🧾 Ingredients: 1️⃣ For baking: Chicken or beef liver — 300–400 g Carrot — 1 pc Onion — 1 pc Green apple (peeled) — 1 pc Cream (20%) — ½ cup Water — ½ cup Butter — 50 g Salt, pepper — to taste 2️⃣ 🍒 For sauce (red currant jelly): Red currants — 150–200 g Water — ½ cup Sugar — 2 tbsp Agar-agar — 1 tsp (leveled) 👩‍🍳 Cooking process: 🔥 1. Preparation If frozen, thaw the liver completely. Rinse well and pat dry with paper towel. Cut carrot, onion, and peeled apple into cubes. 🔥 2. Baking Place in a baking dish: liver, carrot, onion, and apple. Season with salt and pepper. Pour in cream and water (50/50 ratio). Add pieces of butter on top. Cover with foil and bake at 160°C (320°F) for 35–45 minutes. 🔥 3. Blending Let the mixture cool slightly after baking. Transfer everything into a blender and blend until smooth and creamy. Add a bit of baking liquid if needed. Transfer pate into a container or mold and let it cool. 🍒 4. Red currant jelly Add currants, water, and sugar into a saucepan. Cook for 5–7 minutes until soft. Strain through a sieve to remove seeds. Add agar-agar, mix well, and bring to a boil. Boil for 1–2 minutes. ✨ 5. Final touch Pour slightly cooled jelly over the pate in a thin layer. Let it set completely until a glossy surface forms. 🍽️ Serving Slice and serve or spread on toasted bread.
