How to make the BEST Tiramisu | Adam Byatt
This is the tiramisu that I learned from Pina down in Calabria. Amazingly simple and very effective. On the menu always at Rosina. Ingredients Caster Sugar 200g Cocoa Powder 50g Egg, Whole 2 Egg, Yolks 4 Moka Coffee 300ml Mascarpone, Best Quality Available 1kg Pavesini Biscuits 100g Method Using the kitchenaid, whisk yolks, whole egg and sugar to a tight sabayon. Once firm, add the mascarpone and work until smooth and just combined. Building the Tiramisu You will need: Finished tiramisu cream 100ml strong coffee, using a moka will give you the best result Cocoa powder, with small sieve or muslin bag - Choose a dish/pan to serve from. Place a layer of the mascarpone cream in the base. Now Soak the biscuits in the coffee briefly for 1/2 seconds. then place into the cream. Top biscuits with a layer of cream. Top the cream with finely dusted cocoa powder. Repeat the process until the dish is full. You are looking for around 3 layers of biscuit. Allow to set in the fridge for four hours before serving Happy cooking Adam x
