[Osteria Lucca♡Higashi 4-chome Instagram]   / osteria_luccah4   Pescatore (serves 4) [Ingredients] ・Pasta...300g ・Rock salt...10g per 1L of water ・Head-on shrimp...4 ・Spear squid ...1/2 cup ・Clams (with shells)...400g ・Scallops (cut in half)...4 ・Tomato (peeled and roughly chopped)...1 ・Basil (torn by hand)...4 leaves ・Garlic oil...1 tablespoon ・Olive oil...3 tablespoons ・Italian parsley (chopped)...as much as you like ・Arrabiata oil...as much as you like How to make garlic in oil Soak chopped garlic in olive oil for about 5 days and it's done How to make arrabiata oil Soak 3 deseeded chili peppers in olive oil (100cc) for about 3 days and it's done [How to make] 1. Boil water to boil the pasta and add rock salt. 2. Put olive oil and garlic oil in a frying pan and heat over medium heat. Once the garlic is cooked, turn off the heat and add the clams, basil and tomatoes, then turn the heat to medium and cover. ③ Start boiling the pasta. ④ Once the clams have opened, add the shrimp and cover. After about 2 minutes, turn off the heat, add the scallops and squid, cover and let heat through. ⑤ Remove the pasta 30 seconds before the allotted time, add to ④, turn the heat on and cook over medium heat, mixing quickly.
