No Pasta! The Eggplant Lasagna Everyone Keeps Asking Me About 🍆

This cheesy eggplant "lasagna" skips the pasta completely — layers of tender baked eggplant, rich ground beef & tomato sauce, creamy mozzarella and a golden Parmesan crust. One bite and you won't miss the pasta at all! 🍆 INGREDIENTS: • 3 eggplants • 2 teaspoons of salt (14 g) + cold water (for soaking) • 3 tablespoons of vegetable oil • 1 onion • 370 g ground beef • 2 cloves of garlic • 3 tomatoes • 1 teaspoon of oregano, ⅓ teaspoon of ground black pepper, ½ teaspoon of salt • 10 g fresh basil • 200 g mozzarella • 130 g Parmesan cheese Fresh side salad: • 1 tomato, 1 cucumber, ½ red onion, a bunch of parsley • 2 tablespoons of olive oil, ¼ teaspoon of ground black pepper HOW TO MAKE IT: 1. Slice the eggplants, soak in cold salted water for 10 minutes to remove the bitterness, then pat dry. 2. Bake the eggplant slices until lightly golden. 3. Sauce: sauté the onion, add the ground beef and fry until it changes color. Add garlic, grated tomatoes, oregano, pepper and salt — simmer for 15–20 minutes. 4. Layer it up: meat sauce, basil, mozzarella, baked eggplant — repeat. Top with mozzarella and grated Parmesan. 5. Bake at 180°C (350°F) for 30–35 minutes. Let it rest for 10 minutes. 6.
