Today we solve one of my toughest challenges yet. Freeze dried mashed potatoes seems easy enough, but once I started trying to rehydrate, I got stumped. After several bouts with rehydration and trial and error, I solved the problem of the freeze dried mashed potatoes. If you add heat to the rehydration it completely changes the game. I first tried to rehydrate with liquid that was cold. It was extremely watery and I was about ready to give up. I put the mixture in the microwave for 2 minutes and wouldn't ya know it, I got instant mashed potatoes! I include the recipe for making these consistently over and over and a rehydration method for perfect freeze dried instant mashed potatoes every time!
