Recipe Roven Leg 2.0 1 venison leg (about 1 kg), boned 2 tablespoons mayonnaise 2 sprigs rosemary Zest of 1 untreated lemon Salt, freshly ground pepper Remove the bone from the leg. Lightly salt the meat. Let the salt absorb for 15 minutes. Rub the meat with mayonnaise and grill indirectly at 150°C for about 30 minutes, then turn and grill for another 15 minutes until it reaches an internal temperature of 52°C. Remove the meat from the grill and keep warm. Heat the grill to maximum heat. Return the leg to the grill and grill for about 20 seconds on each side, until a grill mark has formed. If you have a Napoleon grill with a Sizzle Zone, you can remove the meat from the cooking chamber and finish grilling immediately on the Sizzle Zone. Finely chop the rosemary and mix with salt, pepper, and lemon zest. Slice the meat and sprinkle the herb salt over it.
