Welcome. Today, I'll show you how to cook sticky, sweet, and savory Japanese Ginger Pork (Shogayaki), even without traditional ingredients like Mirin or pre-sliced meat. The secret is slicing a semi-frozen pork block by hand and using honey for a perfect, glossy glaze. Relax and enjoy the soothing, sizzling sounds of the kitchen.Recipe: Sticky Sweet & Savory Japanese Ginger Pork (Shogayaki) Recreate the golden, savory-sweet Japanese sauce using ingredients that are easy to find anywhere in the world! Ingredients (1–2 Servings) Pork: 250–300g (Pork belly or shoulder loin slices. If unavailable, use a pork loin block and slice it thin.) Onion: 1/2 medium onion (Wedged. It absorbs the sauce beautifully!) Vegetable Oil: 1 Tbsp 【The Global Sauce (Golden Ratio / No Mirin Needed)】 Soy Sauce: 2 Tbsp Honey (or Maple Syrup / Sugar): 1.5 Tbsp Tip: This replaces Mirin (Japanese sweet rice wine). Honey provides the perfect glaze ("Teri") and depth of flavor. Dry White Wine (or Apple Juice / Water): 1 Tbsp Tip: This replaces Cooking Sake. White wine tenderizes the meat, while apple juice adds a pleasant fruitiness. Grated Fresh Ginger: 1–2 Tbsp (Be generous for that great ASMR grating sound!) 【Instructions (Video Workflow)】 1. Prep the Meat (Kitchen Hack) Place your pork loin block in the freezer for about 30 minutes to 1 hour to make it semi-frozen. This makes it much easier to slice thinly. 2. Prep the Veggies & Sauce Cut the onion into wedges. Grate the ginger using a Japanese grater. If you don't have one, you can use a Microplane (cheese zester), finely mince it with a knife, or use a blender. Mix all the sauce ingredients (Soy sauce, honey, white wine, and grated ginger) together in a small bowl. 3. Slice the Meat (Safety Tip!) Take the meat out of the freezer and slice it. Be very careful not to let it slip and cut your hands! Don't force the knife; instead, use a gentle, slow sawing motion back and forth. Once sliced, lightly season the pork with salt and pepper. My Personal Note: In the video, I ended up cutting thick slices vertically, which was a bit clumsy! To slice safely without cutting yourself, it is much better to place a larger, stable block of meat flat on the cutting board and slice across the wide cross-section. 4. Sauté the Onions (★ Key Step) Heat vegetable oil in a pan over medium heat and sauté the onions first. Once they become slightly translucent and golden brown, remove them from the pan and set aside. 5. Sear the Pork Place the sliced pork in the pan in a single layer without overcrowding. Cook over medium-high heat. Try not to move the meat around too much—let it sear undisturbed until one side develops a beautiful golden-brown color to lock in the juices. 6. Finish & Glaze Once both sides of the pork are cooked, return the onions to the pan. Pour the mixed sauce all at once. Reduce the sauce quickly over high heat until it thickens and coats the meat and onions with a glossy glaze. 7. Plate and Serve!
