Add a decent layer of brown sugar. Continue this pattern until the top layer. Add a thick layer of brown sugar on top to make sure all spruce tips are under the sugar. Leave about 1-2 inches of headspace. Place in a cool, dark location with a lid. Burp every few days to relieve pressure. Let sit for 3-6 weeks. Test for desired flavor. Strain spruce tips and store syrup in fridge. Spruce Tip Salt Use equal parts salt and spruce tips. Pulse in a food processer until spruce tips are blended in. Dry in the oven at 150-170 degrees F (most ovens don't go this low - but if yours does, this method works) or dry in a dehydrator at 90-115 degrees F for 6-8 hours. Once salt is completely dry, pulse again in a food processor or stir to mix. Store in a clean glass jar. Alternatively, you can dry on covered trays, stirring daily. Spruce Tip Vinegar Fill a jar 1/2 - 2/3 of the way up with clean spruce tips. Fill the jar with your preferred vinegar. Close with a lid and store in a cool, dark place for 2-6 weeks. Test for desired flavor and strain spruce tips. *If using as a household cleaner - dilute by 50% with water after straining.
