Check out more recipes here https://curiousflavors.com/ Follow me on Instagram @curiousflavors UBE SPANISH BREAD RECIPE Ingredients DOUGH 3/4 cup fresh or evaporated milk 1 1/2 tsp active dry yeast 3 cups all purpose or bread flour 3/4 tsp salt 1/4 cup and 1 tbsp sugar 3 tbsp butter 1 egg 1/3 cup ube/purple yam (cooked/boiled and mashed) 10 ml ube extract 1 tbsp cooking oil 1/4 - 1/2 cup Bread crumbs FILLING 1/2 cup bread crumbs 1/4 cup brown sugar 1/3 cup milk 1/4 cup butter 1/3 cup ube (cooked) 5 ml ube extract 1/8 salt Procedure Microwave fresh milk until it reach 110-115 temperature/lukewarm, not too hot or too cold. In a bowl activate the yeast with the lukewarm milk and 1 tbsp sugar. Let it form a bubbles and foam. In a large bowl combine the rest of the ingredients except cheese, cooking oil and bread crumbs. Mix and knead about 10-15 minutes until the dough is smooth and elastic. You may use your hand to knead or use a stand mixer. I did both to ensure the soft texture of pandesal. Grease a bowl and form a bowl then add in the dough. Let it rise until it gets double or about 90 minutes to 2 hours. While waiting, lets make the filling, in a bowl pour milk, breadcrumbs, butter, brown sugar, cooked or boiled ube, ube extract and salt, mix to combine until it thickens. Punch the dough and cut it into 12-15 pieces depending the size you want. Using a rolling pin, flatten each portion into an oval that is about the size of your hands. Spread about a tablespoon of the filling across the surface of the dough and roll it into a log. Then roll it in bread crumbs. Repeat with all the other portions. cover with plastic or damp towel, let it rise again for an hour. Preheat your oven in 350 farenheit. Now it is ready to bake for 12-15 minutes. Enjoy!
