Chicken and Mushroom Crêpes au Gratin!

Alright, let's break down this Chicken and Mushroom Crêpes au Gratin, Recipe30 style. This is a classic comfort dish, my friends, born from the simple elegance of French crêpes, then loaded up with a rich, creamy chicken and mushroom filling. Think of it as a hug in food form. The delicate crêpes, thin and slightly buttery, are the perfect canvas for the savoury, umami-packed filling. You can use a non stick pan but well seasoned cast iron or carbon steel pans work just as well. The recipe is for 12 crepes as you may ruin a few if tossing, and you will love them for dessert or breakfast with jam.  You could also put half the chicken quantity and use the 12 crepes.  Have fun either way.
