【料理検証】肉じゃがレシピの“最適解”を求めて 6つのレシピで作って比較【火加減と水分量】

Nikujaga (nikujaga) is often called one of the best home-cooked dishes. Maybe it's because it's been so cold every day, but I'm suddenly craving it. But there are so many recipes out there, it can be hard to know which one to use as a reference. So in this video, I'll choose three nikujaga recipes found online, first making them exactly as written, and then making three different variations by changing some parts that I like. Finally, I'll create nikujaga using what I consider to be the "optimal recipe" based on these results, so I hope you'll find it useful. ▼Ingredients/Quantities/Recipe Click Here▼ [Ingredients and Quantities for the "Optimal" Nikujaga (Simmered Meat and Potatoes) (Serving 1)] ・Thinly Sliced ​​Beef Shoulder...100g ・Potatoes...2 ・Onion...1/2 ・Carrot...1/2 ・Green Beans...1 ・Shirataki...100g ・Bonito Stock...300ml ・Dried Bonito Flakes...15g ・Water...500ml ・Brown Sugar (or White Sugar)...1/2 Tablespoon ・Soy Sauce...2 Tablespoons ・Mirin...3 Tablespoons ・Oil...to taste ["Optimal" Nikujaga Recipe] 1. Prepare the potatoes, carrots, and onions. 1-1. Peel the potatoes, remove the sprouts, and chop them. 1-2. Soak the potatoes in water for about 10 minutes. 1-2. Cut off the stems of the carrots, peel them, and cut them into irregular pieces. 1-3. Cut off the roots of the onions and cut them into wedges. 1-4. Drain the potatoes. 2. Prepare the green beans. 2-1. Cut off the stems and cut them into bite-sized pieces. 2-2. Place the green beans and water (1/2 tablespoon) in a heat-resistant container. 2-3. Cover loosely with plastic wrap and microwave (600W) for 30 seconds. 3. Prepare the shirataki noodles. 3-1. Place the drained shirataki noodles in a bowl, add 1 teaspoon of salt, and rub in. 3-2. Add the shirataki noodles to a pot of boiling water and boil for 3 minutes. 3-3. Let cool and cut into bite-sized pieces. 4. Make the bonito stock. 4-1. Add the bonito flakes to a pot of boiling water and let it sit for 1-2 minutes. 4-2. Place a colander lined with cheesecloth over a bowl and gently strain the liquid. 5. Add oil to a pot, heat gently, and then stir-fry the beef. 6. Add the vegetables and shirataki noodles and stir-fry until the oil is evenly distributed. 7. Add the bonito stock and skim off the scum once it boils. 8. Add the brown sugar, soy sauce, and mirin and cover with a drop lid. 9. Once it boils, reduce the heat to low and simmer for 20 minutes. 10. Transfer to serving dishes and top with green beans.
