Full written recipe of Dahi ke Kabab Prep time: 5-10 minutes (8-12 hours for hung curd) Cooking time: 15-20 minutes Serves: 4-5 people Ingredients: Hung Curd CURD | दही 1 KG Birista & Cashew OIL | तेल ½ CUP ONION | प्याज़ 1 SMALL. (SLICED) CASHEW | काजू 8-10 NOS. Mixture PANEER | पनीर 50 GRAMS (GRATED) PROCESSED CHEESE | प्रोसेस्ड चीज़ 1 CUBE / 25 GRAMS RAISINS | किशमिश 1 TBSP (CHOPPED) GINGER | अदरक 1 TSP (CHOPPED) GREEN CHILLI | हरी मिर्च 2 NOS. (CHOPPED) MINT | पुदीना A FEW LEAVES (CHOPPED) FRESH CORIANDER | हरा धनिया 1 TBSP (CHOPPED) CARDAMOM POWDER | इलायची पाउडर A LARGE PINCH CUMIN POWDER | जीरा पाउडर ¼ TSP BLACK SALT | काला नमक ½ TSP CHAAT MASALA | चाट मसाला ½ TSP POWDERED SUGAR | पीसी हुई शक्कर 1 TSP BLACK PEPPER | काली मिर्च ½ TSP (FRESHLY CRUSHED) SALT | नमक TO TASTE GARAM MASALA | गरम मसाला A PINCH GRAM FLOUR | बेसन 1 TBSP Coating & Frying BREADCRUMBS | ब्रेडक्रंब्स AS REQUIRED Method: Set a large sieve over a stock pot or any other deep vessel, then place a muslin cloth over it & transfer the curd into the cloth. Lift the muslin cloth & squeeze it gently & let the excess water drip off, then twist the cloth & place it in the sieve & keep some weight on the curd. Place this setup in the fridge & let it rest overnight, preferably for 8-12 hours. Once rested take out the hung curd & transfer it into a large bowl & set it aside until you do the further process. In a deep pan add oil & heat it up, add the onions & fry them until almost light golden brown then strain them out from the hot oil & place them in a tissue paper lined plate & remove the excess oil by dabbing with a tissue paper. In the same oil fry the cashews until light golden brown & transfer them into a bowl. Once the cashews & onions have cooled down, chop them up roughly & add into the hung curd along with all the remaining ingredients of the mixture & mix well using a spatula. You can add breadcrumbs too if your mixture doesn’t have enough binding. Take a small portion of the mixture & form it into a roundel then gently press to flatten it a bit. Coat the kebab with breadcrumbs & do the same with the rest of the mixture. Fry the kebabs in hot oil (175-180° C) until crisp & golden brown, they take only 2-3 minutes to fry. Once fried transfer them onto a tissue paper lined sieve so that all the excess oil drips off.
