[Ingredients] Sardines: 3 Water for broth: 150cc [Seasonings for broth ☆] Sake, mirin, and dark soy sauce: 50cc each Sugar: 1 tablespoon Pickled plum: 1 (remove seeds and make a paste. Whole plum is fine.) Grated ginger: as needed [For parboiling] Water: 500cc Vinegar: 2 tablespoons [Preparation] 1. Mix all ingredients marked with a ☆ together. Crushing the pickled plum will infuse its flavor throughout the broth. 2. Remove the scales from the sardines and cut off their heads. Open the stomachs, remove the innards, and rinse thoroughly. 3. Bring the water and vinegar for parboiling to a boil and add the sardines. Parboil over low heat for about 10 minutes to remove excess fat and unpleasant odors. 4. Remove the boiled sardines and thoroughly rinse the pot. Add the sardines and broth back into the pot and bring to a boil over medium heat. 5. Once boiling, cover with a drop lid and simmer over low heat for 10 to 20 minutes. It's done when the broth has reduced to about two-thirds of its original volume! Yay! It's done! The aroma of plum and ginger makes the sardines surprisingly easy to eat! A simple pre-boiling step results in a professional-grade flavor with no unpleasant odor.
