Baking my way through summer with 5 very different galette recipes (all my favorites). Over the last couple of days I was experimenting with different crusts and textures , from a rustic spelt and classic crust, to a vegan and even a high-protein version, too. Besides this, I also shared how easily this can be done by using a delicate crunch of crispy fillo layers. Not only sweet, but expect a couple of savory ones, too. I also shared an easy and extremely delicious homemade ice cream recipe. Heirloom Tomato Galette with Classic Dough dough: 216 g flour 1/2 tsp salt 140 g cold butter, cubed 4–5 tbsp ice-cold water 1 large egg yolk Sesame seeds & thyme Egg yolk (for brushing) filling: 2–3 heirloom tomatoes 125 g feta cheese 90 g Greek yogurt 1 tbsp olive oil 2. Spelt Dough Zucchini Galette dough: 150 g spelt flour 50 g rice flour 100 ml cold water 50 ml olive oil or 130 g butter 1/2 tsp salt Thyme Egg yolk (for brushing) filling: 2 baby zucchinis 227 g ricotta Dill & green onion Parmesan cheese 3. Farmer Cheese Dough Raspberry Galette [high-protein dough] dough: 100 g farmer cheese 50 g cold butter (from the freezer) 120 g rice flour / all-purpose flour 1 egg yolk 1 tsp baking powder 1 tbsp sugar 1/4 tsp salt Vanilla extract Egg yolk (for brushing) filling: 300 g raspberries 1 tbsp cornstarch 1 tbsp turbinado sugar 4. Fillo Dough Peach Galette with frangipane paste dough: 8 sheets fillo dough 50 g melted butter frangipane paste: 50 g soft butter 50 g almond flour 50 g coconut sugar 1 egg 3/4 tsp almond extract 1/4 tsp salt filling: 4–5 peaches, thinly sliced 1 tbsp turbinado sugar 1 egg yolk (for brushing) 5.
