A food hygiene inspection is on the cards and Tom and Head Chef Sarah share the secrets behind the pub’s 5 star rating. Meanwhile in the kitchen, the team are on a voyage of discovery with ingredients. On the menu there’s chilli con carne made with haunch of venison, red wine, rice-infused cream and topped off with shavings of chocolate. In his test kitchen Tom cooks a duck salad flavoured with Chinese 5 spice and orange segments. He also shows how to make guinea fowl schnitzel and kohlrabi slaw, before rounding things off with a delicious minty chocolate cheesecake.
