Improves gut health, as beneficial bacteria help maintain a balanced gut flora. 2. Strengthens the immune system, helping to fight pathogens and reducing the risk of infections. 3. They increase the bioavailability of nutrients, making minerals and vitamins easier for the body to absorb. 4. They help reduce inflammation and contribute to better digestion. 5. In addition, fermented foods have a delicious flavor and a long shelf life, which also reduces food waste. Lactofermentation is a fermentation process in which lactic acid bacteria are used to convert the sugars present in foods into lactic acid. This lactic acid not only preserves foods but also gives them a distinctive flavor and health benefits. During this process, lactic acid bacteria ferment carbohydrates and produce lactic acid, which creates an acidic environment that inhibits the growth of harmful bacteria. This results in fermented foods full of probiotics, which are very beneficial for digestive health. PREPARATION OF THE LACOTTERFERMENT For a one-liter jar, place your well-cleaned vegetables in the jar, then prepare a brine with one liter of distilled water and one tablespoon of salt. You can also add optional spices, such as bay leaves, and use cabbage leaves to keep the vegetables submerged. Then, place a glass weight and a special fermentation lid to allow gases to escape and prevent the entry of unwanted bacteria. Let it ferment at room temperature for a few days, and then you can enjoy your fermented vegetables. It's that simple!
