Ingredients^ Cheese mass • sour milk cheese — 800 g • cream 30–36% — 180 g • eggs — 4 pcs. • sugar — 140 g • vanilla sugar — 16 g • butter — 35 g • corn starch — 20 g • pinch of salt Cherry confit • cherries — 250 g • sugar — 45 g • pectin NH — 5 g • lemon juice — 8 g Prepare the sour milk cheese. Beat it together with the cream until creamy. Mix the eggs with sugar, vanilla sugar and salt (do not beat). Add the butter. Add the cheese mass. Add the starch. Mix until smooth. Pour into a Ø16 cm mold. Bake at 145–150°C (top-bottom mode) for 90–100 minutes. Leave in the turned off oven for 30 minutes. Cool for 1 hour at room temperature. Place in the refrigerator for at least 12 hours. Prepare the cherry confit. Cool the confit to 30–35°C. Cover the confit cheesecake.
