How I Made Alton Brown's 40 Clove Chicken Healthier
I have been making Alton Brown's 40 clove chicken recipe for years, but generally saved it for special occasions since it's pretty high in calories. With a few changes, I can now make this meal weekly with all of the flavor and none of the guilt! Recipe (Serves 4): Ingredients: 8 Boneless, skinless chicken thighs 40 cloves peeled garlic 1 Tbsp Olive Oil 1.5 Cups Chicken Broth/Stock (I used Better than Bouillon) 3/4 tsp Dried Thyme (Extra to sprinkle over top) 1/2 tsp Dried Parsley (Extra to sprinkle over top) Salt/Pepper Steps: 1. Sear the chicken thighs in an oven safe skillet or dutch oven over medium-high heat. 2. Use the chicken broth to deglaze the pan. 3. Add the chicken thighs back to the pan and top with peeled garlic cloves. 4. Cover and bake for one hour. 5. Remove from the oven and let sit for 10 minutes before serving. 6. Enjoy!
