Happy Saturday, everyone! In Peru, the flavor of traditional Duck Rice has always fascinated us. However, its dry texture sometimes tires us out, discourages us from ordering another dish, and/or makes us want to add another sauce, such as huancaina, which, by the way, is a great addition to this wonderful dish. Duck rice is also traditionally prepared with Chicha de Jora (a traditional Peruvian dish). For this reason, I personally try not to make the rice so dry, but without trying to negate its originality, I seek to add variety to our "arroz-patera" (rice and duck) tradition. As I always say, cooking is about discovering new flavors, techniques, aromas, and textures for each preparation. For this reason, my Duck Rice is like this, almost creamy, so you won't get tired of eating it again and again. You can also add any salad you like. For example, I really like a salad of radish, avocado, onion, coriander leaves, chili peppers, lemon juice, salt, pepper and THAT'S IT! Also, Arroz con Pato is traditionally prepared with Chicha de Jora. For this reason, I personally seek the rice is not so dry, but without trying to cancel the originality, I seek to give variety to our hobby "arroz-patera". For that reason, my Arroz con Pato is like this, almost syrupy so you don't get tired of eating and repeating. Also, you can add the salad you want.
