Most of us were taught to judge food by labels — organic, local, non-GMO — but Dan starts somewhere much more personal: taste, smell, and how food actually makes us feel. A carrot should smell like a carrot. Flavor is one of the clearest signals of nutrition. In this session, Dan explains that plants aren’t fed by fertilizer alone — they’re nourished through living relationships with soil microbes, minerals, and water. When that relationship is working, crops grow with strength, resistance, and real nourishment for the people who eat them. Hydration becomes the first big lesson. Without water, soil life shuts down and minerals stop moving. Bare soil dries out, biology collapses, and farming becomes harder than it needs to be. Dan shares why he keeps soil covered, loosened, and biologically active so the soil itself does most of the work.
