After having dinner with Paco Granota at Ca Pascual and convincing him to start a YouTube channel, given his knowledge of high-quality market produce, we agreed to meet again and have dinner at Don Guillo, a restaurant in the center of Valencia where its Mediterranean cuisine revolves entirely around the produce. Their recipes are a blend of tradition and creativity, with true soul, where their flavors and aromas transport you to the essence of the Mediterranean in Valencia. An experience I 100% recommend: a very carefully curated restaurant, a comprehensive kitchen, and excellent service, with one of the best wine cellars in the city. DON GUILLO RESTAURANT Gran Via del Marqués del Túria, 73, Valencia. HOURS: Monday to Sunday: 1:00 p.m. - midnight. TIP: Any seasonal product excels, but their sirloin with foie gras is one to try again and again.
