This recipe was passed down the generation to me through my grandmother (z''l) who was a wedding cook in her schtetl. Gefilte Fish (yiddish גיפילטע פיש from German gefüllter Fisch) means STUFFED fish! So how can one call those fish balls gefilte fish? Gefilte Fish is like the Yiddish language. You only open your mouth to find out that you're speaking the wrong way! :) Like Yiddish has different dialects, Gefilte Fish recipes differ from place to place. Everyone considers ther recipe to be the only correct one of course :) Well, mine comes from Eastern Ukrain from a schtetl called Bobrinetz (today in Kirovogradskaya Oblast'). Bekitzer, this is the best Gefilte Fish recipe on Youtube and probably on the net. P.S. I used Matzo Meal because it's for Pesach, but usually I use two slices of bread, soaked in water.
