Mix in a little soda, then gradually add milk until no dry flour remains and the dough is thick. Note: The Amount of buttermilk will vary depending on the type you buy. Some are thin while others are thick. Sift flour onto the counter, add dough, and sift more flour on top. Knead 4-7 times, then pat to 3/4 to 1 inch thick. Cut biscuits, place in a greased pan, pat tops with buttermilk, and bake at 500°F for 15–20 minutes. Melt shortening or butter over medium heat. Turn to medium-high. Sift flour quickly into the melted fat. Mix thoroughly with a wire whisk. Add salt and pepper. Let the flour brown to golden, then add milk; you will smell a great aroma as it browns. Stir constantly, scraping bottom and sides, to prevent lumps. Pour when it thickens; it will continue to thicken. If it is too thick, add a bit of milk and whisk until desired consistency. “Mama used shortening instead of butter.
