Pelle di Soia | Yuba: Pelle di Tofu

Welcome back to the Mandorleyes YouTube channel, I'm Stefania! Today we're introducing "soy skin," a little-known ingredient called tofu skin, or better yet, yuba. Yuba is the Japanese term used internationally, like tofu, to refer to tofu skin (the film that forms on the surface when milk is heated). Today we'll be making two vegetarian/vegan recipes together: yuba rolls stuffed with tofu and vegetables, and tofu skin noodles. The second recipe was actually a misdirection, but I wanted to include it in the video anyway in case it happens to you... NO PANIC! Thicker tofu skin, like the one shown in the video, is perfect for making noodles. Simply soak the yuba in warm water for about 3 minutes and sauté it with your favorite seasoning! INGREDIENTS for 8 yuba rolls or tofu skin noodles: 1 yuba leaf 100g cabbage 1 carrot 1 small onion a handful of Judas ears (Chinese mushrooms) 1 block of firm tofu garlic fresh ginger 1 tablespoon cornstarch 1 tablespoon sesame oil (I used the untoasted oil to make the filling more delicate) salt to taste pepper to taste ACCOMPANYING SAUCE 100ml water 1 tablespoon cornstarch 1 tablespoon soy sauce pepper to taste a pinch of sugar 1 tablespoon sesame oil *1 tablespoon oyster sauce (optional: as per tradition) Combine all the cold ingredients in a saucepan and stir well. Bring the liquid to a boil until the desired consistency.
