Hearts of Palm Gratin – Cooking with Marc J. Sievers

► Inspired by the classic French dish Coquilles Saint-Jacques, I wanted to create a recipe that took cues from the original (wine, cream, and a crisp topping) but would be a vegetarian dish that could stand on its own and be served at even the chicest of luncheons or dinner parties. In fact, my Hearts of Palm Gratins were served at The Vintner Dinner during the 2021 Newport Mansions Wine & Food Festival! I was asked to create a menu from scratch, and I knew this dish would evoke the spirit of Newport, RI and its ocean heritage while delighting the festival’s guests.
