Let it simmer until tender, then remove it from the pot to cool. Dissolve the yeast and salt in 250ml lukewarm water and knead thoroughly with all the remaining ingredients for about 8 minutes. Cover the dough and let it rise for 30 minutes in a warm place (e.g., preheat the oven to 50°C, turn it off, and place the dough in the oven). Grease a loaf pan or line it with parchment paper and sprinkle with seeds, if desired. Place the dough in the pan and let it rise again at room temperature for 20 minutes. Meanwhile, preheat the oven to 240°C and place a small, ovenproof dish of water on the bottom of the oven. Prick the dough several times with a fork and brush it with water. Sprinkle with seeds, if desired. Bake the bread on the second rack from the bottom for 20 minutes, then cover it with parchment paper, reduce the heat to 190°C, and bake for another 40 minutes. Let it cool before slicing, otherwise the bread will crack. *This link is an affiliate link.
