In this simple and flavorful recipe, the peppers are processed in two ways: one part is blended to partially replace the liquid in the mixture, adding color and flavor; The other is pan-fried with garlic and basil, adding texture and intensity to the final result. Parmesan and pecorino cheeses make the dough even richer, lending a flavorful and enveloping touch. After a short leavening period, the fritters are fried until perfectly golden: crispy on the outside, soft and full of flavor on the inside. They're ideal as an appetizer, aperitif, or even as a main course, perhaps accompanied by a fresh seasonal salad.
