First, I’m heading to one of the city’s best-known places for Moling Qabeli Palaw, then visiting local butcher shops to see how the famous Goshte Land is made. Along the way, we get a closer look at Herat’s food culture and traditions. My first stop is Shinwari Restaurant, where Moling Qabeli Palaw is served with fragrant rice, tender meat, raisins, carrots, and rich bone marrow. The Moling is the star of the dish, adding deep flavor and making every bite unforgettable. Next, I visit local butcher shops to see Goshte Land, a traditional dried lamb specialty. The meat is salted, dried, and aged for nearly two months before it’s ready to eat. It’s one of Herat’s most unique foods and a tradition that has been preserved for generations.
