Cover the kidneys with water and let them soak overnight. Cut the kidneys into small pieces and remove all veins and fat. Make sure to remove all the fat from the kidneys to avoid a bitter taste. Place the kidneys in a pot of water and bring to a boil. Once the kidneys are cooked, drain the water and rinse well. Put the washed kidneys in a pot with hot water and let them cook for 1 hour. 1 kg young potatoes, boil until soft. 1/2 tablespoon salt. Cook the potatoes thoroughly. Chop 2 red onions. Melt 20 g butter in a pan. Add the onion to the pan. Sauté the onion until translucent. 1 tablespoon flour. Mix well. 270 ml dry red wine. Mix well. 250 ml beef broth. 1/3 teaspoon black pepper. A few sprigs of thyme. 1/2 teaspoon salt. Mix well. Let it simmer for 15 minutes. In another pan, melt 20 g butter. Fry the potatoes in butter until golden brown. The sauce is ready and can be removed from the heat. Chop 250 g mushrooms. Slice the cooked kidneys. Melt 20 g butter in a pan. Fry the mushrooms until golden brown and remove from heat. Add 20 g butter. Sear the kidneys on high heat for 5 minutes until golden brown. Add 50 ml cognac. Add the fried mushrooms. Mix well. Strain the finished sauce through a sieve. Mix well. Cover and let it simmer for 10–15 minutes. Our dinner is ready and can be served! This is a fantastic dish that all food lovers will enjoy!
