Moradabadi Chicken Biryani Ingredients • Fortune Soya Health oil 100 ml • Ginger Garlic paste 2 tbsp • Biryani Masala Green cardamom 6 Cumin 2 tbsp Black pepper 15 Cloves 10 Black cardamom 2 Cinnamon 1 inch Star Anise 1 Salt to taste • Green chili pickle 2 tbsp • Whole green chili 3 • Chicken with bone 1 kg • Yoghurt 150 ml • Lemon slices 1 • Water to make stock 2 L • Soaked Fortune Biryani Special Basmati Rice 1 kg • Food colour in water 2 tbsp • Kewra water 2 tbsp • Onion slices for barista 3 onions • Oil to fry onions 100 ml Method • In a heavy bottom pan heat oil and add ginger garlic paste. • Saute ginger garlic then add biryani Masala and saute a bit. • Add the Biryani masala and fry a little. • Once they crackle add green chili pickle and fry it for 2 to 3 minutes • Add fresh green chili and saute again • Add chicken and fry a bit for 5 minutes. • Add yoghurt and Lemon slices and suate again • Now add water to make stock. • Let it cook till it comes to boil • Add Fortune Biryani Special Basmati rice and stir a bit • Adjust salt. It should be slightly on a higher note • When water is reduced and rice is visble cover it with a lid for Dum for 20 minutes • Don’t open immediately . Let it rest for 10 minutes • Now add food colour and kewra water and again cover for 10 minutes • Now fry sliced onions to make barista • Now top the biryani with hot fried onions with its oil • Plate in a flat tray and serve with fried onions as garnish #BiryaniTrailsOfIndia #FortuneBiryaniSpecialBasmatiRice #ChefOsamaJalali #MoradabadiBiryani #ChickenBiryani
