Slimming Friendly Cowboy Rice - Sausage & BBQ Beans & Rice - One Pot Dish - Low Calorie & Low Swip
Welcome back to 100lbs and Counting! 🤠🔥 In today’s video, I’m sharing a quick, comforting, and seriously flavour-packed recipe for Cowboy Rice — a one-pot wonder made with sausage, baked beans, and rice, all coated in rich, smoky, spicy BBQ flavours. This dish is: ✨ Ready in under 30 minutes ✨ Slimming World friendly ✨ Perfect for meal prep ✨ Great for reheating (it tastes even better the next day!) If you’re looking for an easy midweek dinner that’s filling, budget-friendly, and full of bold flavour, this one’s for you. Minimal washing up, maximum taste — just how we like it! Ingredients : 8 Reduced Fat Pork Sausage (approx 400g). 4 bacon medallions, chopped 1 Onion, chopped 2 bell pepper (red/green), chopped 4 cloves of garlic, crushed 200g uncooked long grain rice 1 tin baked beans 4 tbsp BBQ sauce Worcester Sauce 500ml Chicken Stock Oil Spray 1tbsp paprika 1 tsp each of oregano, cumin, onion powder, garlic powder Salt & Pepper Method : 1. Add the sausage meat and the bacon to a dry non stick frying pan over a medium high heat, and fry – break up the sausage as it cooks but aim keep it in bite size chunks. You can add spray oil if needed during this process, but the sausage may render some fat. Set aside once cooked through. 2. Spray the frying pan with oil and reduce to a medium heat. Add the onion, peppers and the paprika, oregano, cumin, onion powder and garlic powder fry for about 4-5 minutes, until softened. Add the garlic and cook for a further 1 minute. 3. Add back in the sausage, along with the rice, beans bbq sauce, Worcester sauce and the stock and stir to combine 4. Raise the heat to bring to a boil, then reduce heat to medium again, and simmer until stock is absorbed. 5. Remove from the heat, put the lid on the and set aside for 10 minutes, 6.
