We will also have delicious food and desserts, such as chicken biryani with different combinations, dates and different kinds of halva and coffee at the home of my dear friend Mr. Soleiman's mother. We are in Nizwa, a city near Muscat, Oman, and we are going to go to my good friend Soleiman's mother's house, who helped us a lot on this trip. They said that every Friday, the whole family gathers at their mother's house to eat, and they are all here today. The food they prepared was chicken biryani, which you could try with different sides, such as yogurt or biryani sauce, salad, pickles, mango sauce. You pour it over the rice and eat it with chicken, it was extremely delicious. According to traditional rules, you must eat with your right hand, so you take some rice and chicken, and make a ball with it then eat it. After lunch, we had various fruits, fresh dates, very tasty and healthy halva, and Omani coffee, which was very enjoyable. An hour long drive from Nizwa we reached the village of Misfat Al-Abriyeen and we got an exciting and detailed report on the complete process of cooking Shuwa, which is the national dish of Oman. They made shuwa from fresh lamb meat for us. First, they marinate the meat with special Omani sauce and spices such as garlic, ginger, cinnamon, coriander, Omani vinegar, and date vinegar, and then they wrap banana leaves around it and put it in a bag and sew it. Then it goes into the wood fire oven that is in the ground, then again banana leaves are put on the sack and they close the oven and cover it with mud and let it cook for about sixteen hours. This food is mostly cooked during Eids and many times they cook up to 300 lamb in this way. To taste it we decided to try this dish in the same traditional way, even though there were spoons available. The food comes in a big tray with rice.
