Green or fully ripe plums: 1kg 2. Salt: 10% (100g) 3. Water: 1L For Shiso Rub: 1. Red shiso leaves: Approximately 150g (using less will result in a paler plum color) 2. Salt: 25g (per 150g of shiso) 3. Vinegar: 500ml (for the actual pickling) (Amount needed: for coloring the shiso extract) Pickling ① Vinegar: 300ml (per 1kg of plums) ② Rock sugar: 350-500g (per 1kg of plums) Disinfection/sanitizing ① White liquor: as needed Other ① Large bucket (for removing the bitterness) ② Pickling bucket ③ Drying colander ④ Kneading bucket ⑤ Awl, toothpicks, etc. ⑥ Kitchen paper, etc.
