Breakfast in a Jar- Ham and Eggs Ingredients: • 4 cups diced potatoes • 2 cups diced ham • ½ cups dehydrated diced bell pepper • ½ cups dehydrated diced onion • ½ cup dehydrated diced mushrooms • 1 cup shredded cheddar cheese • 8 large eggs • ½ cup milk • 1 tsp salt • 1 tsp black pepper • 1 Tbls olive oil Instructions: 1. Re-hydrate the veggies with hot water for about 30 minutes. 2. In a skillet heat the oil, and then brown the diced potatoes, but do not cook through. Remove the pan from the stove and stir in he diced ham, bell pepper, onion, and mushrooms. 3. In a large mixing bowl, mix together the eggs, milk, salt, and black pepper. 4. Add the cooked and slightly cooled potato mixture to the mixing bowl and stir to combine. Mix in the shredded cheese. 5. Using a canning funnel, ladle the breakfast mixture into each of the pint-sized canning jars, filling them about 2/3 full. 6. Use a clean towel to wipe the rims of the jars to remove any food residue. 7. Place the lids and bands on each jar and tighten them until you feel resistance. 8.
