Fluffy Mini Chocolate Cakes ♡ Bake With Me

The softest mini chocolate cakes topped with a chocolate mascarpone whipped cream :) Chocolate Sheet Cake 3/4 cup (180g) sour cream 2 eggs 1/2 cup (110g) vegetable oil 2 tsp vanilla 1 cup (240g) warm coffee 2 cups (240g) all-purpose flour 4 tsp cornstarch 1 cup (200g) granulated sugar 1/2 cup (100g) brown sugar 7 tbsp (50g) unsweetened cocoa powder 1 tsp baking powder 1 tsp baking soda 1 tsp salt ♡ Pour into a 12x17x1 inch cookie sheet pan ♡ Bake at 340F for 17-20 minutes (or until toothpick comes out clean) Recipe from Julie Marie Eats ♡ https://juliemarieeats.com/nutella-cake/ Chocolate Mascarpone Cream 8oz cold mascarpone 1/2 cup (100g) brown sugar 1/4 cup (25g) unsweetened cocoa powder 1 tsp vanilla 1 and 1/2 cups (360g) cold heavy cream 📝 Notes ♡ Make sure the cake is cooled before cutting out circles ♡ I used a 3.5 inch cookie cutter, but feel free to use a bigger or smaller one (just make sure you cut an even number of circles) ♡ Don't throw away the scraps! You can use them to top the cakes (crumbles) or make cake pops :)
