La Fideuà de Pascale (sorte de paella de pâtes)

Fideua, a cousin of paella, is a hearty, traditional Catalan family dish. This typical seafood dish, generous and flavorful, is ideal for large gatherings of family or friends. Quick and easy to cook, fideuà is a delicious alternative to paella. For me, Pascale's is delicious, and I wanted to pay tribute to her with this video. Here's her recipe: Serves 5/6 1 red pepper 1 small onion 1 garlic clove Shrimp 1 piece of cuttlefish Mussels Half a can (1/2 liter) of tomato puree A little sweet chili pepper If you're feeling brave, make a fish stock with the fish heads, onion, and carrot. Cook thoroughly and strain. Add oil and salt to prevent sticking. Sauté the peppers for a few minutes. Add the onions, cut into small pieces, for a few minutes. Then the garlic. Then cut the cuttlefish into 2cm cubes. Add them with the shrimp, half the mussel shells with their water. The broth and the peeled tomato. 1/2 spoonful of paella coloring. Simmer for 5 or 10 minutes. Top up with water or broth to cover. Taste to adjust the seasoning. You need 250 ml of liquid per 100 g of pasta. 500 g medium-sized vermicelli noodles.
