Shipping throughout Spain 🇪🇸 Ingredients: Filling 270g heavy cream (35% fat) 70g sugar 35g water 3 egg yolks 100g dark chocolate (50% cocoa) in chunks Topping 100g dark chocolate (50% cocoa) in chunks Preparation Filling Place the butterfly whisk on the blades. Pour the cream into the bowl and whip at speed 3.5 until stiff peaks form. Remove the butterfly whisk, pour the whipped cream into a bowl, and refrigerate. Place the sugar and water in the bowl and cook for 8 min/100°C/speed 2. Add the egg yolks and mix for 1 min/speed 3.5. Then, cook for 1 min 30 sec/70°C/speed 3.5. Add the dark chocolate and program 30 sec/speed 6. Transfer the cream to a bowl and set aside. Wash and thoroughly dry the mixing bowl and lid. Topping Place the chocolate in the mixing bowl and grate 5 sec/speed 7. Then, melt 2 min/50°C/speed 2. Using a spatula, scrape the chocolate down the sides of the bowl and melt for another 2 min/50°C/speed 3. Pour into a bowl and brush the inside of a 6-round silicone mold (7 cm diameter) with the chocolate (reserve the remaining chocolate). Refrigerate (approx. 10 minutes) until hardened. Brush the inside of the molds again with the remaining chocolate to create a thicker layer. Freeze for 15 minutes. Assembly Using a spatula, gently fold the chocolate and egg yolk cream into the whipped cream. Spread the filling in the prepared mold, smoothing the surface well. Freeze for a minimum of 4 hours before serving.
