Authentic Polish Comfort Food from Podlasie Potato Babka is a traditional Polish dish from the Podlasie region, deeply rooted in rustic, countryside cooking. Made primarily from grated potatoes, onions, and bacon, this dish proves that simple ingredients can create unforgettable flavors. Every Polish home has its own version—and this one proudly earns a place in my Top 10 best dishes in the world. Crispy on the outside, tender and creamy on the inside, this baked potato masterpiece is pure comfort food at its finest. 🛒 Ingredients (Serves 6–8) 5 kg (11 lbs) peeled potatoes, grated 3 medium onions, finely diced 1.5 kg (3.3 lbs) fresh raw bacon 3 eggs, beaten 250–400 ml (1–1¾ cups) whole milk 1 tbsp butter (plus extra for greasing and topping) Vegetable oil (for frying onions) Salt, to taste Freshly ground black pepper, to taste ½ tsp ground nutmeg 👨‍🍳 Instructions: 1 Prepare the onions Dice the onions into a medium-sized cube—not too fine, not too chunky. Fry them in oil with salt and one tablespoon of butter over medium-low heat for about 15 minutes, until soft, golden, and aromatic. 2 Prepare the bacon Remove the skin from the fresh bacon using a sharp knife. Slice it into long strips about 1 cm thick. 3 Grate the potatoes Grate the peeled potatoes using an electric grater for best texture and ease. 4 Balance the moisture Transfer the grated potatoes to a large bowl. Ladle out 250–400 ml of potato liquid and replace it with the same amount of milk. 5 Season the mixture Add the beaten eggs, generous salt, black pepper, nutmeg, and the fried onions. Mix thoroughly until well combined. 6 Assemble the babka Grease a baking dish with butter or margarine. Lay the bacon slices on the bottom, then slowly pour the potato mixture over the top. Dot with a little extra butter and cover. 7 Bake to perfection Bake in a preheated oven at 175°C / 347°F for 90 minutes. Uncover, increase the temperature to 200°C / 392°F, and bake for another 30 minutes, until the top is crispy and beautifully browned. 🔥 Serving Suggestions Serve hot with pickled cucumbers or sour cream Enjoy as a side dish with roasted meats Best next-day version: slice thick pieces and pan-fry until golden brown 👉 Crispy outside, soft and creamy inside — absolutely irresistible!
