What I ate today as a healthy, plant-based vegan. Simple Mango Breakfast Bowl, easy Weeknight Taco Pizza, and lots of leftovers, because real life :) Recipes and info below ↠ Subscribe to my channel here ↠ https://bit.ly/2uAQgS7 Mango Breakfast Bowl mango strawberries plain unsweetened almond milk yogurt almond butter shredded coconut Make it extra special with a sprinkle of cinnamon or by toasting the coconut if desired. To toast coconut, just place a handful in a dry frying pan over medium heat. Cook for 2-3 minutes or until lightly golden brown. Weeknight Vegan Taco Pizza 1 cup vegan refried beans 1/4 cup frozen corn 1 frozen pizza crust, I used a cauliflower crust toppings lettuce tomato vegan cheese sauce (recipe below) red onion cilantro red pepper flakes optional toppings: salsa guacamole hot sauce Bake pizza according to package directions. Mine said to put the toppings on the pizza before baking so I added the beans and corn and baked until golden brown. Then top with lettuce, tomato, red onion, cilantro, and red pepper flakes. I like to season with little salt and pepper too. I needed to use a red pepper and some leftover sweet potato I’d made the night before, so I roasted the red pepper with onions and garlic until golden brown and softened and let it cool. Then I transferred the veggies to a blender along with the sweet potato, curry powder, coconut milk, canned tomatoes, and veggie broth. I blended that until it was very smooth and warm it up on the stove for a few minutes. I added salt and pepper to taste and topped each bowl with a squeeze of lime juice, some red pepper flakes, and cilantro. The toppings really brought the dish together. This was heart and filling, and really easy to make. Since this isn’t a ā€œrecipeā€ I’ve included a similar soup recipe below. It’s one of my favorites ever and I make it all the time.
