For those who ask me for ingredients in cups, here's an estimate, clarifying that for consistent baking results, it's always best to measure by weight. Oven preheated to 250°C or 480°F 500 grams of flour equals approximately 4 level cups. 1 tablespoon of yeast equals 11 grams. 1 tablespoon of salt equals approximately 10 grams. So for the first fermentation, you'd need two cups of flour and a little over half a teaspoon of yeast. And for the dough, you'd need four cups, a little over a tablespoon of yeast, and a tablespoon plus a pinch of salt. I hope these equivalencies are helpful. But if you can, weigh the ingredients!
