Cea, a town of about 2,000 inhabitants in the province of Ourense, is something of a mecca for Galician bread. The town has been famous for its loaves for centuries: they started back in the 13th century, by 1750 there were already 82 bakers here, and since 2004 they have had their own PGI (Protected Geographical Indication) that ensures traditional production methods are respected. There are 19 certified bakeries in Cea, but since we can't stop breaking new ground, we decided to visit one that's a bit out of the ordinary. Aboamigalla makes Cea bread and Galician bread (another PGI), respecting tradition but embracing modernity.
