A full day at home getting ready for my mom's arrival. Making the guest room feel cozy and special. Cooking homemade meatballs, fresh sandwich rolls, and lemon blueberry muffins from scratch. Spending the day at home, cooking, tidying and making everything feel just right for someone I love! 🌿 In this video: Preparing the guest room Homemade meatballs & tomato sauce Fresh baked sandwich rolls Lemon blueberry muffins 🫐 Lemon Blueberry Muffins Ingredients: ¼ cup milk 1 cup cottage cheese 2 eggs 2 tablespoons olive oil ½ cup honey 1 teaspoon vanilla extract Juice and zest of ½ lemon 1½ cups Italian flour 1 teaspoon cinnamon ½ teaspoon salt 2 teaspoons baking powder ½ teaspoon baking soda 1 cup blueberries (if using frozen, toss them in some flour to coat) Instructions: Preheat oven to 350°F and prepare a muffin tray. Add milk, cottage cheese, eggs, olive oil, honey and vanilla to a blender. Blend until smooth. In a separate large bowl whisk together flour, cinnamon, salt, baking powder and baking soda. Slowly whisk the wet ingredients into the dry. Fold in the blueberries with a spatula until just combined. Be careful not to overmix. Divide batter amongst the muffin cavities using a ¼ cup scoop. Bake for 28 minutes (depending on the oven) or until a toothpick comes out clean.
