Timeline: 00:00 How to make the almond meringue 04:06 How to make the chocolate ganache 06:01 Assembling the dacquoise How to make: 1.To make chocolate batter, sift 80g almond powder, 55g powdered sugar, 10g cake flour and 5g cocoa powder for later use. 2.Whisk 110g egg white on high speed and add 40g granulated sugar in three times until the meringue forms stiff peaks that stand straight up when the beater is lifted. 3.Add flours in two times into the meringue and stir well for each time, the finished batter is elastic and glossy, then transfer into a piping bag. 4.Spray water on both sides of the mold and place on the silicone mat, squeeze the batter into the mold, each slot should be fill with batter, then use a scraper to smooth the surface and take away the mold, sprinkle powdered sugar in two times. 5.Preheat the oven to 180°C/338°F, then reduce to 170°C/338°F and bake for 16 mins. Once baked, let it cool completely on the baking pan. 6.To make chocolate ganache, melt 80g dark chocolate over hot water and stir well. 7.Heat 60ml whipping cream and 7g corn syrup over low heat until 50°C -60°C. 8.Add the melted dark chocolate into the mixture and mix evenly. 9.Add 13g softened unsalted butter and stir until cooled and thickened, then transfer into a piping bag. 10.Sandwich the dacquoise with the chocolate ganache.
