Making a Green Goddess Salad with Grilled Chicken | Healthy High Protein Lunch + Encouragement

Easy Green Goddess Chicken Salad made with a creamy homemade avocado herb dressing, fresh spring mix, and grilled chicken breast. This high-protein salad is refreshing, flavorful, and perfect for a healthy lunch or dinner. In today’s video, I’m sharing this simple and delicious recipe along with a word of encouragement. Sometimes we go through rough seasons in life, but we cannot give up on the assignment, purpose, or calling God has placed on our lives. Even when the journey feels difficult, continue to trust God, stay consistent, and keep moving forward. Ingredients Green Goddess Dressing 1 avocado 1 bunch green onions, chopped 1 bunch fresh dill, chopped 1 bunch fresh parsley, chopped 1/2 lemon, juiced 1 cup mayonnaise 1/2 tbsp capers 2–4 tbsp avocado oil (add to desired consistency) Salt and pepper to taste (optional) Salad Spring mix salad Grilled chicken breast, sliced Feta cheese 3 boiled eggs, chopped Cherry tomatoes Cucumber, sliced Additional salad toppings of your choice (optional) Instructions Add avocado, green onions, dill, parsley, lemon juice, mayonnaise, capers, and avocado oil to a blender or food processor. Blend until smooth and creamy. Add more avocado oil if needed to reach your desired consistency. Add spring mix to a bowl. Top with grilled chicken breast, feta cheese, chopped boiled eggs, cherry tomatoes, and sliced cucumber. Add any additional toppings you enjoy. Drizzle with homemade Green Goddess dressing and enjoy.
